Ingredients:
2 cup boiled frozen sweet corn
1 tablespoon thai red curry paste
1 teaspoon garlic powder
1/2 teaspoon red chilli powder
1 cup mashed, boiled sweet potato
1 tablespoon kaffir lime leaves
1 1/2 teaspoon salt
2 tablespoon virgin olive oil
Preparation:
Add sweet corn, sweet potatoes, that red curry paste, lime leaves, salt, garlic powder and red chilli powder in a bowl and mix them completely. Make small sized patties.
Add some olive oil in a pan and fry the patties until they turn golden colored on the surface.
Remove them on the kitchen absorbent paper and serve them with the thai peanut sauce. They are delicious to taste.
