Required Ingredients:
- Vallarai Spinach – 1 bowl
- Duvaram dal – 3/4 cup
- Garlic – 4 cloves (finely chopped)
- Turmeric powder – 1/2 teaspoon
- Asparagus powder – 1/2 teaspoon
- Chilli peppers – 4
- Onion – 1 (finely chopped)
- Tomato – 2 (finely chopped)
- Tamarind – size of 1 lemon
- Oil – 2 tablespoons
- Mustard – 1 teaspoon
- Onion – 1 (finely chopped)
- Garlic – 3 cloves (finely chopped)
- Salt – to taste
Recipe:
1) Begin by rinsing the duvaram dal and adding it to a cooking pot.
2) Next, toss in the garlic, turmeric powder, asparagus powder, green chillies, and chopped onion into the same pot.
3) Then, clean the vallar greens, give them a good wash, and add them to the pot.
4) Pour enough water into the pot, cover it, and place it in the oven for 5 whistles.
As soon as you hear the whistle, uncover the pot and wait for a while before adding tamarind. Transfer the mixture to a container, season with salt according to your preference, and serve it alongside meth.
6) Next, place a pan in the oven and heat it up with some oil. Once hot, add mustard seeds and curry leaves to infuse the oil with flavor.
7) Introduce onions and garlic into the pan and fry them until they undergo a noticeable change in color.
8) Once the frying is complete and the spinach is well incorporated, you'll have a delectable Vallaraik keera kadayal ready to be enjoyed.
